Four district ethnic groups– the Pampango, Ilocano, Pangasinense, and Tagalog– share a life of peace and harmony in the province best known for its vast sugar and rice plantations. The last province to be organized under the Spanish Regime in 1874 and known for its fine, local cuisine, Tarlac is home to excellent ethnic and artisanal cooking. Truly the “melting pot of Central Luzon,” its heritage of good food had been culled from its early settlers' varied places of ancestry: the provinces of Bulacan, Nueva Ecija, Zambales, Pangasinan, and the Ilocos Region.
